For the first time I am feeling better to be under a stressful environment. Check out the following Ted talk. It’s all about the mindset when it comes to stress. Do you think stress is going to kill you????? If so, scientists have found that it will. If you don’t think so, then welcome to the club to living happier even under stressful situations.
I for one learned things happen and many times the outcomes one doesn’t have any control over it. Then I am yet curious to learn why stress for me now is not as bad, as it was let’s say for me back in the college years.
Currently, I am in a personal transition in my life and sadness may creep up, but keeping in perspective that I have Multiple Sclerosis. I am reminded daily I am still alive, moving and that my life never ended because of the circumstance. Its moving forward. So a stressful situation isn’t as stressful for me now. My heart and mind is open to a new stage in my life. 🙂
Let’s talk about food now.
It was Christmas time when I wrote this blog friends. 🙂 Interestingly, the most common time that one can break a diet is during the holidays. Christmas this year was for me the hardest holiday to keep my diet. When I figure I would be spending it alone the holidays, many questions came up. Like what should I do or where do I celebrate it?
Well, I stayed low key and went to a Christmas Eve service. In this service there was an elderly man that read the Story of Jesus, we sang songs at a different tempo and lights were illuminated. It reminded me the light in me that shines through even in dark moments. So thankful baby Jesus the light was born. It was all heartwarming and welcoming.
After the service I joined a group of ladies for refreshments and a light buffet of Korean meats, pastries and cheese. Yes, I could not resist and broke my diet sharing with friends. 🙂 It was truly nice though to pass my time with the ladies. The good part to following a diet faithfully like Dr. Roy L. Swank said, it is allowable.

I tried to measure my choices according to the diet. There were no options with veggies only, so I choose the asparagus with cream cheese and slice of thin ham on it. Instead of drinking wine. I had a strawberry sprinter that had sparking water and not high frustose corn syrup. Where I broke the diet and my stomach suffered the most indigestion was the bread pastry with cheese. I took a small piece of the roasted ham, but didn’t like the taste. Happily I survived the time with my friends, without hurting no ones feelings. 🙂 I was truly thankful to be there with the ladies.

Topics of life, travel, children and life before children were spoken about. 🙂 Truly we were blessed. The next day, I gave the Chiropractor a text confession about that I broke my diet this weekend. It’s all good, because I am back on the bandwagon again with my diet. So I have a gift for you.

2nd Step: Making the sauce.Make the sauce. Amount used 2 cups of presoaked dates, 1 1/4 cup of cacao, 1/3 cup of coconut butter and 1/4 cup water. Blend. Mix the sauce with 5 pomegranate fruit seeds. Put the mix on a baking sheet in the oven at 200 degrees Fahrenheit for 5 hours or put it in a dehydrator machine overnight.
